Ingredients
- steaks (at room temperature)
- A large handful of fresh parsley (very finely chopped)
- cloves of garlic (minced)
- tbsp extra virgin olive oil
- tbsp red wine vinegar (or white wine vinegar)
- Ghee or coconut oil (for searing)
Preparation
- Prepare the chimichurri first: in a small bowl, combine the finely chopped parsley, minced garlic, olive oil, and vinegar. Season with salt and pepper, then set aside to let the flavors meld.
- Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
- Heat a dollop of ghee or coconut oil in a skillet over high heat until smoking hot.
- Sear the steaks for about 2 minutes per side for medium-rare (or longer to your preference), then remove them from the pan.
- Let the meat rest for about 5 minutes under a loosely tented piece of aluminum foil, slice beautifully, and spoon the fresh chimichurri sauce over the top.
