🥩 Steak with Chimichurri

Ingredients

  • steaks (at room temperature)
  • A large handful of fresh parsley (very finely chopped)
  • cloves of garlic (minced)
  • tbsp extra virgin olive oil
  • tbsp red wine vinegar (or white wine vinegar)
  • Ghee or coconut oil (for searing)

Preparation

  1. Prepare the chimichurri first: in a small bowl, combine the finely chopped parsley, minced garlic, olive oil, and vinegar. Season with salt and pepper, then set aside to let the flavors meld.
  2. Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
  3. Heat a dollop of ghee or coconut oil in a skillet over high heat until smoking hot.
  4. Sear the steaks for about 2 minutes per side for medium-rare (or longer to your preference), then remove them from the pan.
  5. Let the meat rest for about 5 minutes under a loosely tented piece of aluminum foil, slice beautifully, and spoon the fresh chimichurri sauce over the top.
