Ingredients
- g chickpeas (canned, rinsed and drained)
- g fresh spinach
- can of chopped tomatoes (400 g)
- cloves of garlic (minced)
- Olive oil
Preparation
- Heat a splash of olive oil in a deep pan or skillet over medium heat.
- Add the minced garlic and sauté gently for 1 minute until fragrant.
- Pour in the can of chopped tomatoes, add the rinsed chickpeas, and stir well to combine. Season with a pinch of salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer uncovered for about 15 minutes to allow the sauce to thicken slightly.
- Right before serving, add the fresh spinach handful by handful, stirring gently until the leaves have completely wilted into the warm sauce.
