Ingredients

  • Quinoa
  • Fresh parsley (very finely chopped)
  • Cucumber (finely diced)

Preparation

  1. Cook the quinoa according to the package instructions in water with a pinch of salt. Allow the quinoa to cool down completely.
  2. Finely dice the cucumber and tomatoes into uniform pieces. Chop the fresh parsley as finely as possible.
  3. In a large salad bowl, combine the cooled quinoa with the diced cucumber, tomato, and finely chopped parsley.
  4. Create a simple dressing by mixing a generous splash of extra virgin olive oil with fresh lemon juice to taste.
