Ingredients
- Quinoa
- Fresh parsley (very finely chopped)

Preparation
- Cook the quinoa according to the package instructions in water with a pinch of salt. Allow the quinoa to cool down completely.
- Finely dice the cucumber and tomatoes into uniform pieces. Chop the fresh parsley as finely as possible.
- In a large salad bowl, combine the cooled quinoa with the diced cucumber, tomato, and finely chopped parsley.
- Create a simple dressing by mixing a generous splash of extra virgin olive oil with fresh lemon juice to taste.
- Pour the dressing over the tabbouleh, toss everything together well, and season with salt and pepper.
