Ingredients

  • Rice paper sheets
  • Shrimp (cooked) or chicken strips (cooked)
  • Carrot (cut into thin julienne strips)
  • Cucumber (cut into thin strips, watery core removed)
  • Fresh mint leaves
  • Dipping sauce (e.g., coconut aminos with a squeeze of lime)

Preparation

  1. Set up a large, shallow bowl or deep plate filled with lukewarm water.
  2. Dip one sheet of rice paper into the water for a few seconds until it just begins to soften, then lay it flat on a clean cutting board.
  3. Place a few mint leaves in the center of the sheet, followed by a small bundle of carrot and cucumber strips, and a few shrimp or chicken pieces.
  4. Fold the left and right sides of the rice paper over the filling, then firmly and carefully roll it from the bottom to the top into a neat roll.
  5. Repeat for the remaining rolls and serve fresh with a healthy dipping sauce of your choice.
