Ingredients
- Rice paper sheets
- Shrimp (cooked) or chicken strips (cooked)
- Carrot (cut into thin julienne strips)
- Cucumber (cut into thin strips, watery core removed)
- Fresh mint leaves
- Dipping sauce (e.g., coconut aminos with a squeeze of lime)
Preparation
- Set up a large, shallow bowl or deep plate filled with lukewarm water.
- Dip one sheet of rice paper into the water for a few seconds until it just begins to soften, then lay it flat on a clean cutting board.
- Place a few mint leaves in the center of the sheet, followed by a small bundle of carrot and cucumber strips, and a few shrimp or chicken pieces.
- Fold the left and right sides of the rice paper over the filling, then firmly and carefully roll it from the bottom to the top into a neat roll.
- Repeat for the remaining rolls and serve fresh with a healthy dipping sauce of your choice.
